Agar

Agar is a seaweed extract in the form of a creamy coloured powder.

It is a setting agent or jelly extracted from several species of sea vegetables. Pacific Harvest’s agar is made in New Zealand and extracted from red seaweeds. it contains no animal product and therefore is suitable for vegans and vegetarians. Its gelling effect is much stronger than the animal gelatine (7-8 times), with fewer calories.

Agar is a dietary source of iron, phosphorus, calcium and Vitamin A, B1, B6, B12, biotin, C & D

Agar as a setting agent dates back to 16th Century Japan.

Agar can be used in exactly the same way as gelatine but must be prepared in a certain way. Before using agar in a recipe, the powder must be soaked until a liquid is formed and then simmered for several minutes before setting. The product is considered by many to be superior to gelatine as it doesn't melt easily in warm weather and has a firmer texture. Agar makes sauces, dips and other mixtures seem unctuous and creamy without the use of butter or cream: it is ideal to use to achieve a rich texture with very few calories. Agar itself and has the advantage of being colorless and tasteless while adding minerals and vitamins to the dish. Agar is commonly used to make pies, fruit desserts, jams, jellies, sauces and vegetable moulds.
