Seawater contains 84 mineral elements and is often used for the production of salt. Sea Salt should have the same mineral content as seawater.
The process used in making the salt is key: it should be totally natural, featuring no artificial heating (only sunshine) or adulteration by chemical additives.
Only natural sea salt will have the following characteristics:
- colour is not pure white or totally even
- it is moist to the touch and retain its moisture
- it is formed of very small, precisely cubic crystals
